About the Recipe
Blueberry cheesecake is a classic dessert that never fails to impress. This recipe elevates the traditional cheesecake with a swirl of vibrant blueberry preserves and a generous scattering of fresh blueberries. Perfect for any occasion, this indulgent treat is sure to satisfy your sweet cravings.
Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 2 cups fresh blueberries
- 1/2 cup blueberry preserves
- Fresh mint leaves for garnish (optional)
Preparation
- Preheat Oven: Preheat your oven to 325°F (163°C).
- Prepare Crust: In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then set aside to cool.
- Make Filling: In a large mixing bowl, beat the cream cheese until smooth. Add sugar and vanilla extract, continuing to beat until well combined. Add eggs one at a time, mixing well after each addition. Finally, fold in sour cream until the batter is smooth.
- Layer the Blueberries: Gently fold in half of the fresh blueberries into the cheesecake batter. Pour the batter onto the cooled crust. Sprinkle the remaining blueberries evenly over the top.
- Swirl with Blueberry Preserves: In a small saucepan, warm the blueberry preserves over low heat until it becomes a pourable consistency. Drizzle the preserves over the cheesecake batter and use a toothpick to create a marbled effect.
- Bake: Bake in the preheated oven for 50-60 minutes or until the center is set. The edges should be slightly golden.
- Cool and Chill: Allow the cheesecake to cool in the oven with the door ajar for about an hour. Refrigerate for at least 4 hours or overnight for best results.
- Serve: Once chilled, carefully remove the cheesecake from the springform pan. Garnish with fresh mint leaves if desired. Slice, serve, and enjoy the divine combination of creamy cheesecake and juicy blueberries.
