Our Citrus Burst Cake brings the sunny essence of oranges and lemons together in a delightful cake that’s perfect for any occasion. The zesty combination of citrus flavors, coupled with the moist and airy texture, makes this cake a refreshing and irresistible treat.


Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 1 and 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs, at room temperature
  • Zest of 1 orange and 1 lemon
  • 1/4 cup fresh orange juice
  • 1/4 cup fresh lemon juice
  • 1/2 cup plain yogurt
  • 1 teaspoon vanilla extract
  • Confectioners’ sugar for dusting (optional)

Preparation

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Cream Butter and Sugar: In a large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add Eggs and Citrus Zest: Add the eggs one at a time, beating well after each addition. Stir in the zest of orange and lemon.
  5. Citrus Juices: In a separate bowl, combine the fresh orange juice, fresh lemon juice, yogurt, and vanilla extract.
  6. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the citrus juice mixture. Begin and end with the dry ingredients, mixing until just combined.
  7. Pour into Pan: Pour the batter into the prepared cake pan, spreading it evenly.
  8. Bake: Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Cooling: Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. Dusting (Optional): Dust the cooled cake with confectioners’ sugar for a finishing touch.
