Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons ground coffee (medium to dark roast)
- 1 tablespoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon brown sugar
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- Fresh cilantro, chopped (for garnish, optional)
- Lime wedges (for serving)
Preparation
- Preheat Grill: Preheat your grill to medium-high heat.
- Prepare Coffee-Chili Rub: In a small bowl, mix together the ground coffee, chili powder, smoked paprika, garlic powder, onion powder, brown sugar, cumin, salt, and black pepper to create the rub.
- Rub Chicken: Pat the chicken breasts dry with paper towels. Brush each chicken breast with olive oil, ensuring they are well-coated. Generously rub the coffee-chili mixture over both sides of each chicken breast, pressing the rub into the meat.
- Grill Chicken: Place the seasoned chicken breasts on the preheated grill. Grill for 6-8 minutes per side or until the internal temperature reaches 165°F (74°C), and the chicken has a nice char on the outside.
