Ingredients
- 2 racks of baby back ribs
- 2 tablespoons brown sugar
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon cayenne pepper
- Salt and black pepper to taste
For the Coffee BBQ Sauce:
- 1 cup strong brewed coffee, cooled
- 1/2 cup ketchup
- 1/4 cup apple cider vinegar
- 1/4 cup brown sugar
- 2 tablespoons Worcestershire sauce
- 2 tablespoons Dijon mustard
- 2 cloves garlic, minced
- Salt and black pepper to taste
Preparation
- Prepare the Ribs:
- Remove the membrane from the back of the ribs.
- In a small bowl, mix brown sugar, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper to create a dry rub.
- Rub the dry rub generously over the ribs. Cover and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to marinate.
- Preheat the Grill:
- Preheat your grill to medium heat.
- Grill the Ribs:
- Place the ribs on the preheated grill and cook for about 1.5 to 2 hours, turning occasionally, or until the meat is tender and begins to pull away from the bones.
- Make Coffee BBQ Sauce:
- In a saucepan, combine brewed coffee, ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, Dijon mustard, minced garlic, salt, and black pepper.
- Simmer over medium heat, stirring occasionally, until the sauce thickens slightly.
- Glaze the Ribs:
- Brush the ribs with the coffee BBQ sauce during the last 15-20 minutes of cooking, allowing the sauce to caramelize on the ribs.
- Serve:
- Once the ribs are cooked to perfection and glazed with the coffee BBQ sauce, remove them from the grill.
- Let the ribs rest for a few minutes before slicing.
