- 1/2 cup granulated sugar
- 3 tablespoons cornstarch
- 3 large egg yolks
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- Dark chocolate shavings or cocoa powder for garnish
- Coffee beans for decoration (optional)
Preparation
- Instructions:Making the Coffee Custard:
- In a medium saucepan, whisk together the granulated sugar, cornstarch, and salt.
- In a separate bowl, whisk the egg yolks and set aside.
- Gradually whisk the brewed coffee into the dry ingredients until smooth.
- Stir in the milk and vanilla extract.
- Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a gentle boil. This should take about 5-7 minutes.
- Once boiling, continue to cook for an additional 1-2 minutes until the custard is thick enough to coat the back of a spoon.
- Remove the saucepan from heat. Slowly pour a small amount of the hot custard into the bowl with the whisked egg yolks, whisking continuously. This tempers the eggs.
- Gradually whisk the tempered egg mixture back into the saucepan with the remaining custard.
- Return the saucepan to low heat and cook for an additional 2 minutes while stirring. Do not boil.
- Remove from heat, transfer the custard to a bowl, and let it cool to room temperature. Cover and refrigerate for 1-2 hours until fully chilled.
- In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Take four serving glasses or bowls.
- Spoon a layer of coffee custard into each glass.
- Add a layer of whipped cream on top of the custard.
- Repeat the layers until the glasses are filled, ending with a dollop of whipped cream.
- Garnish with dark chocolate shavings or a sprinkle of cocoa powder.
- Optionally, decorate with a few coffee beans for an elegant touch.
- Refrigerate the parfaits for an additional 1-2 hours to allow the flavors to meld.
