  • 2 tablespoons ground coffee
  • 2 tablespoons brown sugar
  • 1 teaspoon chili powder

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

    • In a small bowl, combine the ground coffee, brown sugar, chili powder, ground cumin, salt, and black pepper. Mix them well to create the coffee rub.
  2. Coat the Pork:
    • Pat the pork tenderloin dry with paper towels. Sprinkle and rub the coffee mixture evenly over the entire surface of the pork tenderloin. Make sure it’s well coated on all sides.
  3. Marinate:
    • Place the coffee-rubbed pork tenderloin in a resealable plastic bag or in a covered dish. Let it marinate in the refrigerator for at least 30 minutes or up to 4 hours to allow the flavors to penetrate the meat.

  5. Sear the Pork:
    • Heat a large ovenproof skillet or pan over medium-high heat. Add a little oil and sear the coffee-rubbed pork tenderloin on all sides until it’s browned.
  6. Roast in the Oven:
    • Transfer the skillet to the preheated oven and roast the pork tenderloin for about 20-25 minutes or until it reaches an internal temperature of 145°F (63°C).
  7. Rest and Slice:
    • Remove the pork from the oven and let it rest for a few minutes. Slice it into medallions and serve.
