- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
For the Ginger-Cream Filling:
- 2 cups heavy cream
- 1/2 cup granulated sugar
- 1 tablespoon ground ginger
- 1 teaspoon vanilla extract
- 1/4 cup crystallized ginger, finely chopped (for garnish)

For the Crust:
