Topped with crystallized ginger for a delightful crunch, these bars are a delectable choice for those seeking a unique and satisfying dessert experience.

Ingredients

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

For the Ginger-Cream Filling:

  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1 tablespoon ground ginger
  • 1 teaspoon vanilla extract
  • 1/4 cup crystallized ginger, finely chopped (for garnish)

Preparation

For the Crust:

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish.
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated.
  3. Press the crumb mixture firmly into the bottom of the prepared baking dish to create an even crust.
  4. Bake the crust in the preheated oven for 8-10 minutes or until golden brown. Allow it to cool completely.

For the Ginger-Cream Filling:

  1. In a large bowl, whip the heavy cream until soft peaks form.
  2. Add sugar, ground ginger, and vanilla extract. Continue whipping until stiff peaks form.
  3. Spread the ginger-cream filling over the cooled crust, smoothing it with a spatula.
  4. Refrigerate the bars for at least 2 hours to allow the filling to set.
  5. Before serving, sprinkle finely chopped crystallized ginger on top for an extra burst of flavor and texture.
