Ingredients
For the Muffins:
- 1 3/4 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup strong brewed coffee, cooled
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
For the Streusel Topping:
- 1/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 2 tablespoons unsalted butter, cold and cubed
- 1 teaspoon ground cinnamon
Preparation
For the Muffins:
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix together brewed coffee, melted butter, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
For the Streusel Topping:
- In a small bowl, combine flour, granulated sugar, and ground cinnamon.
- Add cold, cubed butter and use a pastry cutter or your fingers to incorporate until the mixture resembles coarse crumbs.
- Sprinkle the streusel topping over the muffin batter in each cup.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
