Start your day on a delicious note with our Java Muffins – a delightful blend of rich coffee essence and moist muffin goodness. These muffins, adorned with a cinnamon-infused streusel topping, are the perfect companion to your morning coffee or an indulgent treat for any coffee lover.

Ingredients

For the Muffins:

  • 1 3/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup strong brewed coffee, cooled
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Streusel Topping:

  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tablespoons unsalted butter, cold and cubed
  • 1 teaspoon ground cinnamon

Preparation

For the Muffins:

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, mix together brewed coffee, melted butter, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.

For the Streusel Topping:

  1. In a small bowl, combine flour, granulated sugar, and ground cinnamon.
  2. Add cold, cubed butter and use a pastry cutter or your fingers to incorporate until the mixture resembles coarse crumbs.
  3. Sprinkle the streusel topping over the muffin batter in each cup.
  4. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
