Ingredients

  • Eggs
  • Asparagus
  • Fresh or frozen peas
  • Parmesan cheese
  • Fresh herbs (such as chives or parsley)
  • Olive oil
  • Salt and pepper

Preparation

  1. Preheat oven to 350°F (175°C).
  2. In a large ovenproof skillet, sauté chopped asparagus in olive oil until tender.
  3. Add peas to the skillet and cook for an additional 2-3 minutes.
  4. In a bowl, whisk together eggs, grated Parmesan cheese, chopped fresh herbs, salt, and pepper.
  5. Pour the egg mixture over the vegetables in the skillet and cook until the edges start to set.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and golden brown on top.
