  • Ingredients:
    • 1 1/2 cups brewed espresso or strong coffee, cooled
    • 4 large egg yolks
    • 2/3 cup granulated sugar
    • 1 cup mascarpone cheese
    • 1 1/2 cups heavy cream
    • 1 teaspoon vanilla extract
    • 24-30 ladyfingers (savoiardi)
    • Unsweetened cocoa powder, for dusting
    • Dark chocolate shavings, for garnish (optional)

Preparation

  1. Instructions:
    1. Prepare the Coffee: Brew a strong cup of espresso or coffee and allow it to cool to room temperature. You can also chill it in the refrigerator for faster cooling.
    2. Make the Mascarpone Mixture: In a mixing bowl, whisk together the egg yolks and granulated sugar until the mixture becomes pale and slightly thick. This takes about 3-4 minutes.
    3. Add Mascarpone: Gently fold the mascarpone cheese into the egg yolk mixture until well combined. Set aside.
    4. Whip the Cream: In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form.
    5. Combine Mixtures: Carefully fold the whipped cream into the mascarpone mixture until smooth and well incorporated.
    6. Layering: Quickly dip each ladyfinger into the cooled coffee, making sure not to soak them too long, and arrange a layer of dipped ladyfingers in the bottom of a serving dish or individual glasses.
    7. Mascarpone Layer: Spread half of the mascarpone mixture over the ladyfingers.
    8. Repeat Layers: Add another layer of dipped ladyfingers on top of the mascarpone mixture. Finish with the remaining mascarpone mixture on top.
    9. Chill: Cover the dish or glasses with plastic wrap and refrigerate for at least 4 hours or overnight. This allows the flavors to meld and the tiramisu to set.
