Welcome the fall season with these delicious Pumpkin Spice Muffins. Packed with warm spices and pumpkin flavor, they’re perfect for breakfast or a snack.
Add some chopped nuts or chocolate chips for extra texture and flavor. These muffins can be stored in an airtight container for up to 3 days.
Ingredients:
- 1 3/4 cups all-purpose flour
- 1 cup sugar
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 tsp pumpkin pie spice
- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 2 large eggs
- 1/4 cup milk
- 1 tsp vanilla extract
Instructions:
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking soda, baking powder, salt, and pumpkin pie spice.
- In another bowl, combine pumpkin puree, vegetable oil, eggs, milk, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool on a wire rack and enjoy!
