Ingredients:

  • 4 pounds peaches (about 12 medium-sized peaches)
  • 4 cups granulated sugar
  • ¼ cup lemon juice (freshly squeezed or bottled)
  • 1 packet (1.75 oz) pectin (optional, for a firmer set)

Instructions:

Prepare Your Equipment:

  • Start by sterilizing your canning jars and lids. Place the jars in a large pot or canner, cover them with water, and bring to a boil. Boil for 10 minutes to sterilize. Keep the jars warm in the hot water until ready to use.
  • Wash the lids and bands in hot, soapy water, then rinse and set aside.

Prepare the Peaches:

    • Peel the Peaches: To easily peel the peaches, bring a large pot of water to a boil. Carefully lower the peaches into the boiling water for about 30 seconds. Then, transfer the peaches to an ice water bath to cool quickly. The skins should slip off easily. If needed, use a paring knife to remove any stubborn spots.
    • Slice the Peaches: Cut the peaches in half, remove the pits, and then slice the peaches into thin wedges or small chunks, depending on your preference for the preserve texture.

Cook the Preserves:

  • In a large, heavy-bottomed pot, combine the sliced peaches and lemon juice. If using pectin, sprinkle it over the peach mixture and stir to combine.
  • Gradually add the sugar, stirring well to dissolve. Let the mixture sit for about 10 minutes to allow the sugar to draw out the juices from the peaches.
  • Place the pot over medium-high heat and bring the mixture to a boil, stirring frequently to prevent sticking. As the mixture heats, the peaches will soften and release more liquid.
  • Once the mixture reaches a full rolling boil (one that doesn’t stop bubbling when stirred), reduce the heat slightly and continue boiling for about 10-15 minutes. Stir frequently and skim off any foam that forms on the surface.

    • To check for doneness, you can perform the plate test: Place a small plate in the freezer for a few minutes. Drop a small spoonful of the preserves onto the chilled plate and let it sit for a minute. Run your finger through the preserves; if it wrinkles slightly and holds its shape, it’s ready. If it’s still too runny, continue boiling for a few more minutes and test again.

Fill the Jars:

  • Using a jar lifter, carefully remove one jar from the hot water and place it on a clean towel. Place a funnel over the jar, and ladle the hot preserves into the jar, leaving about ¼ inch of headspace at the top.
  • Wipe the rim of the jar with a damp cloth to ensure a clean seal. Place a lid on the jar, then screw on a band until it’s fingertip-tight.
  • Repeat the process with the remaining jars and preserves.

Process the Jars:

  • Place the filled jars back into the canner or large pot, ensuring they are covered with at least 1 inch of water. Bring the water to a boil and process the jars for 10 minutes.
  • After processing, use a jar lifter to remove the jars from the water and place them on a towel or cooling rack. Let the jars cool undisturbed for 12-24 hours.

Check the Seals and Store:

  • After the jars have cooled, check the seals by pressing the center of each lid. If the lid doesn’t pop back, the jar is sealed. If any jars didn’t seal properly, refrigerate them and use within a few weeks.
  • Label the sealed jars with the date and store them in a cool, dark place. Properly sealed jars can be stored for up to a year.

Notes:

  • Use fully ripe peaches for the best flavor. For a smoother texture, you can mash the peaches slightly during cooking.
  • Pectin is optional; it helps achieve a firmer set but isn’t necessary if you prefer a softer preserve.
