Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and herbs.
  2. Add in the buttermilk and melted butter, stirring until a sticky dough forms.
  3. Lightly oil or butter an 8-inch cast iron skillet or round baking pan.
  4. Pour the dough into the skillet and gently press it into an even layer.
  5. Sprinkle with flaky sea salt or extra herbs on top, if desired.
  6. Bake at 400°F (200°C) for 20–25 minutes, until golden and the top springs back.
  7. Let cool slightly, then slice and enjoy warm.

Note

You can customize the herbs to suit your taste—rosemary, thyme, oregano, or even a pinch of garlic powder all work beautifully.

For extra richness, brush the top with melted butter or olive oil as soon as it comes out of the oven.

Don’t have buttermilk? Make your own by adding 1 tablespoon of vinegar or lemon juice to 1 cup of milk and let it sit for 5–10 minutes.

This bread is best enjoyed warm, but it also makes delicious toast the next day—try it with a pat of butter or a slice of sharp cheese.
