Welcome the arrival of spring with this bright and flavorful pea and mint soup, perfect for enjoying as a light lunch or appetizer.

Ingredients

  • 4 cups fresh or frozen peas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/4 cup fresh mint leaves, chopped
  • Salt and pepper to taste

Preparation

  1. In a large pot, sauté the onion and garlic until softened.
  2. Add the peas and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 5 minutes.
  3. Remove from heat and stir in the chopped mint leaves.
  4. Using an immersion blender or regular blender, puree the soup until smooth.
  5. Season with salt and pepper to taste. Serve hot or chilled.
