For the Lemon Tea Bread:
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup plain yogurt
- Zest of 2 lemons
- 2 tablespoons fresh lemon juice
For the Lemon Glaze:
- 1 cup powdered sugar
- 2 tablespoons fresh lemon juice
- Lemon zest for garnish (optional)
Preparation
For the Lemon Tea Bread:
- Preheat the oven to 350°F (180°C). Grease and flour a 9×5-inch loaf pan.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the yogurt. Mix until just combined.
- Stir in the lemon zest and fresh lemon juice.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
- Allow the tea bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
For the Lemon Glaze:
- In a small bowl, whisk together the powdered sugar and fresh lemon juice until smooth.
- Once the tea bread has cooled, drizzle the lemon glaze over the top.
- Garnish with lemon zest if desired.
