Ingredients

2 tablespoons olive oil

  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
  • 2 cans (28 ounces each) whole peeled tomatoes
  • Salt and pepper to taste
  • 1 tablespoon sugar (optional, to balance acidity)
  • Fresh basil leaves, torn, for garnish (optional)

Preparation

Heat the Olive Oil: In a large saucepan or Dutch oven, heat the olive oil over medium heat.

  1. Sauté the Aromatics: Add the chopped onion to the pan and cook, stirring occasionally, until softened and translucent, about 5 minutes. Add the minced garlic, dried oregano, dried basil, and red pepper flakes (if using), and cook for an additional 1-2 minutes, until fragrant.
  2. Crush the Tomatoes: Pour the canned tomatoes into the saucepan, along with their juices. Using a wooden spoon or spatula, gently crush the tomatoes to break them up into smaller pieces. Alternatively, you can use kitchen shears to chop them directly in the pan.
  3. Season and Simmer: Season the sauce with salt, pepper, and sugar (if using) to taste. Bring the sauce to a simmer, then reduce the heat to low. Let the sauce simmer gently, uncovered, for about 30-45 minutes, stirring occasionally, until it thickens to your desired consistency. Taste and adjust seasoning as needed.
  4. Blend (Optional): For a smoother sauce, you can use an immersion blender to puree the sauce directly in the pot until smooth. Alternatively, transfer the sauce to a blender or food processor and blend until smooth, then return it to the pot.
  5. Serve: Once the sauce has reached your desired consistency, remove it from the heat. Serve the tomato sauce hot over cooked pasta, use it as a base for pizza, or incorporate it into your favorite Italian-inspired dishes. Garnish with torn fresh basil leaves, if desired.
