These Lavender Shortbread Cookies add a touch of sophistication to your tea time. The subtle floral essence of lavender complements the richness of buttery shortbread, creating a delightful treat for a classy occasion.

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1 tablespoon culinary lavender buds
  • 1/4 teaspoon salt
  • Powdered sugar for dusting (optional)

Preparation

  1. Preheat the oven to 350°F (180°C).
  2. In a bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. In a separate bowl, whisk together the flour, cornstarch, lavender buds, and salt.
  4. Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.
  5. Roll the dough into a log shape, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  6. Slice the chilled dough into 1/4-inch rounds and place them on a parchment-lined baking sheet.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  9. Dust with powdered sugar if desired.
