Classic Potato Salad

Ingredients
- 3 pounds Yukon Gold or red potatoes (about 6–7 medium)
- 1 ¼ cups mayonnaise (Duke’s or Hellmann’s preferred)
- 2 tablespoons yellow mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
- Salt and pepper, to taste
- 3 hard-boiled 3–4 eggs, chopped
- ¾ cup celery, finely chopped
- ½ cup sweet or dill pickles, finely chopped (or relish)
- ¼ cup red onion or green onions, finely chopped (optional)
- Paprika, for garnish

Wash and cube potatoes (peel if preferred). Boil in salted water until just fork-tender, about 10–12 minutes. Drain and let cool slightly.- 3

In a large bowl, whisk together mayonnaise, mustard, vinegar, sugar, salt, and pepper.- 5

Add warm potatoes to the bowl and gently fold to coat. Then fold in chopped eggs, celery, pickles, and onions (if using).- 7
Chill:- 8
Cover and refrigerate for at least 2 hours, preferably overnight for best flavor.- 9

Garnish with paprika before serving.
