Ingredients
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 cup chopped kale leaves, stems removed
  • 1 cup chopped spinach leaves
  • 1 zucchini, chopped
  • 2 celery stalks, chopped
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon ground turmeric
  • 4 cups low-sodium vegetable broth
  • 1 of Juice lemon
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley or cilantro, chopped (for garnish)
Instructions
  1. Sauté Aromatics:
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Stir in the minced garlic, grated ginger, and ground turmeric; cook for an additional 1-2 minutes until fragrant.
  5. Add Vegetables:
  6. Add the broccoli, zucchini, celery, and kale to the pot.
  7. Pour in the vegetable broth and bring the mixture to a boil.
  8. Simmer:
  9. Reduce the heat to low and let the soup simmer for 15-20 minutes, or until the vegetables are tender.
  10. Add Spinach and Blend:
  11. Stir in the spinach leaves and let them wilt for about 2 minutes.
  12. Using an immersion blender, puree the soup until smooth. Alternatively, carefully transfer the soup in batches to a blender and blend until smooth.
  13. Season and Serve:
