Grilled Vegetable Skewers
Ingredients
:
1 zucchini, sliced
1 yellow squash, sliced
1 bell pepper, cut into chunks
1 red onion, cut into chunks
1 cup cherry tomatoes
1 cup mushrooms
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon dried Italian seasoning
Salt and pepper to taste
Instructions
:
Preheat the grill to medium-high heat.
In a large bowl, toss all the vegetables with olive oil, balsamic vinegar, Italian seasoning, salt, and pepper.
Thread the vegetables onto skewers.
Grill the skewers for 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
