This hearty beef stew is packed with tender chunks of beef, vegetables, and a rich, savory broth. It's the perfect dish to warm you up on a chilly day.
Ingredients
2lbs beef stew meat, cubed
3tablespoons olive oil
4cups beef broth
1cup red wine (optional)
1onion, chopped
3carrots, sliced
3potatoes, cubed
2cloves garlic, minced
2bay leaves
1teaspoon thyme
Salt and pepper to taste
2tablespoons 2 cornstarch mixed with 2 tablespoons water (optional, for thickening)
Instructions
In a large pot, heat the olive oil over medium heat. Brown the beef on all sides, then remove and set aside.
Return the beef to the pot and add the beef broth, bay leaves, thyme, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for 1 hour.
Add the carrots and potatoes, and continue to simmer for another 30-40 minutes, or until the vegetables are tender.
If a thicker stew is desired, stir in the cornstarch mixture and cook until the stew thickens.
Serve hot, garnished with fresh parsley if desired.
