Description

This hearty beef stew is packed with tender chunks of beef, vegetables, and a rich, savory broth. It's the perfect dish to warm you up on a chilly day.

Ingredients
  • 2 lbs beef stew meat, cubed
  • 3 tablespoons olive oil
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, cubed
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons 2 cornstarch mixed with 2 tablespoons water (optional, for thickening)
Instructions
  1. In a large pot, heat the olive oil over medium heat. Brown the beef on all sides, then remove and set aside.
  2. In the same pot, sauté the onion and garlic until softened. Add the wine, if using, and cook until reduced by half.
  3. Return the beef to the pot and add the beef broth, bay leaves, thyme, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for 1 hour.
  4. Add the carrots and potatoes, and continue to simmer for another 30-40 minutes, or until the vegetables are tender.
  5. If a thicker stew is desired, stir in the cornstarch mixture and cook until the stew thickens.
  6. Serve hot, garnished with fresh parsley if desired.
