  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  2. Combine Dry Ingredients: In a large bowl, mix together the oats, nuts, seeds, cinnamon, and salt.
  3. Mix Wet Ingredients: In a small saucepan over low heat, combine the honey (or maple syrup), coconut oil, and vanilla extract. Stir until melted and combined.
  4. Combine Everything: Pour the wet mixture over the dry ingredients and stir until everything is well coated.
  5. Spread on Baking Sheet: Spread the granola mixture evenly on the prepared baking sheet.
  6. Bake: Bake for about 25-30 minutes, stirring halfway through to ensure even browning. Keep an eye on it toward the end to prevent burning. It should be golden brown.
