Instructions
Prepare the Ground Beef:
In a large skillet, brown 1 pound of ground beef over medium heat until fully cooked. Drain any excess grease.
Add the taco seasoning:
Mix the ground beef with 1 tbsp chili powder, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/4 tsp oregano, 1 tsp paprika, 1 tsp salt, 1 tsp pepper, 1.5 tsp cumin, and 1/2 cup water.
Stir and simmer until the liquid is absorbed and the beef is well-coated with seasoning.
Sauté the Vegetables:
In a separate skillet, heat 1 tbsp olive oil over medium heat. Add diced onions and sauté until soft.
Stir in the diced jalapeños, 2 tbsp enchilada sauce, the seasoned ground beef, and 1 tbsp fresh cilantro. Simmer the mixture until heated through.
Assemble the Burritos:
Heat the refried beans in a saucepan until warm.
Spread a layer of refried beans onto each tortilla and sprinkle with shredded cheddar cheese.
Add a portion of the beef mixture on top and sprinkle with fresh cilantro.
Wrap each tortilla tightly, tucking the ends in, and place seam-side down in a baking dish.
Bake the Burritos:
Pour the remaining enchilada sauce over the burritos and sprinkle the top with the remaining shredded cheese.
Bake in a preheated oven at 350°F for 12-15 minutes, until the cheese is melted and bubbly.
Garnish and Serve:
Garnish with fresh cilantro and serve warm.
