Nana’s Beef and Bean Burritos

Ingredients
  • 1 pound ground beef
  • Leftover taco meat using my taco seasoning (optional)
  • 2 cups Sharp shredded cheddar cheese (Italian style)
  • Amy's Organic Refried Beans
  • Fresh cilantro (chopped)
  • Diced jalapeños
  • Diced onions
  • 1 can red enchilada sauce
  • Large tortillas
  • 1 tbsp olive oil
  • For Taco Seasoning:
  • 1 tbsp chili powder
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp oregano
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp 1.5 cumin
  • 1/2 cup water
Instructions
  1. Prepare the Ground Beef:
  2. In a large skillet, brown 1 pound of ground beef over medium heat until fully cooked. Drain any excess grease.
  3. Add the taco seasoning:
  4. Mix the ground beef with 1 tbsp chili powder, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/4 tsp oregano, 1 tsp paprika, 1 tsp salt, 1 tsp pepper, 1.5 tsp cumin, and 1/2 cup water.
  5. Stir and simmer until the liquid is absorbed and the beef is well-coated with seasoning.
  6. Sauté the Vegetables:
  7. In a separate skillet, heat 1 tbsp olive oil over medium heat. Add diced onions and sauté until soft.
  8. Stir in the diced jalapeños, 2 tbsp enchilada sauce, the seasoned ground beef, and 1 tbsp fresh cilantro. Simmer the mixture until heated through.
  9. Assemble the Burritos:
  10. Heat the refried beans in a saucepan until warm.
  11. Spread a layer of refried beans onto each tortilla and sprinkle with shredded cheddar cheese.
  12. Add a portion of the beef mixture on top and sprinkle with fresh cilantro.
  13. Wrap each tortilla tightly, tucking the ends in, and place seam-side down in a baking dish.
  14. Bake the Burritos:
  15. Pour the remaining enchilada sauce over the burritos and sprinkle the top with the remaining shredded cheese.
  16. Bake in a preheated oven at 350°F for 12-15 minutes, until the cheese is melted and bubbly.
  17. Garnish and Serve:
  18. Garnish with fresh cilantro and serve warm.
