Summer Garden Vegetable Stir-Fry

Ingredients:

  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup green beans, trimmed
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the onion and garlic, sauté until fragrant.
  • Add the zucchini, yellow squash, bell pepper, green beans, and cherry tomatoes.
  • Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
  • Mix soy sauce and honey, then pour over the vegetables.
  • Season with salt and pepper.
  • Garnish with fresh basil leaves before serving.
