  • 4 large sweet potatoes, peeled and cubed
  • 1/2 cup unsalted butter, softened
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup mini marshmallows
  • 1/2 cup chopped pecans
  • 2 tbsp brown sugar
  • 2 tbsp melted butter
Instructions
  1. Prepare the Sweet Potatoes
  2. Preheat your oven to 350°F (175°C). Boil the sweet potatoes in a large pot of water until tender (about 15-20 minutes). Drain well and return them to the pot.
  3. Mash the Sweet Potatoes
  4. Add butter, brown sugar, granulated sugar, milk, vanilla extract, cinnamon, nutmeg, and salt to the sweet potatoes. Mash until smooth and well-combined.
  5. Assemble the Casserole
  6. Spread the mashed sweet potato mixture evenly into a greased 9x13-inch baking dish.
  7. Add the Topping
  8. Sprinkle the mini marshmallows and chopped pecans evenly over the top.
  9. In a small bowl, mix the brown sugar and melted butter, then drizzle over the marshmallows and pecans.
  10. Bake the Casserole
  11. Bake for 20-25 minutes or until the marshmallows are golden and the casserole is bubbly.
