Ingredients:
- 4 large zucchinis, spiralized into noodles
- 1 cup cherry tomatoes, halved
- 1/4 cup pine nuts, toasted
- 1/2 cup fresh basil leaves
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic
- 1/4 cup olive oil
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions:
- In a food processor, combine basil leaves, Parmesan cheese, garlic, and olive oil. Blend until smooth to make the pesto. Season with salt and pepper.
- In a large bowl, toss the zucchini noodles with the pesto until well coated.
- Add the cherry tomatoes and toasted pine nuts.
- Serve immediately, garnished with fresh basil leaves.
