Zucchini Noodles with Pesto

Ingredients:

  • 4 large zucchinis, spiralized into noodles
  • 1 cup cherry tomatoes, halved
  • 1/4 cup pine nuts, toasted
  • 1/2 cup fresh basil leaves
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

  • In a food processor, combine basil leaves, Parmesan cheese, garlic, and olive oil. Blend until smooth to make the pesto. Season with salt and pepper.
  • In a large bowl, toss the zucchini noodles with the pesto until well coated.
  • Add the cherry tomatoes and toasted pine nuts.
  • Serve immediately, garnished with fresh basil leaves.
