Zucchini Noodles with Pesto
Ingredients
:
4 large zucchinis, spiralized into noodles
1 cup cherry tomatoes, halved
1/4 cup pine nuts, toasted
1/2 cup fresh basil leaves
1/4 cup grated Parmesan cheese
2 cloves garlic
1/4 cup olive oil
Salt and pepper to taste
Fresh basil leaves for garnish
Instructions
:
In a food processor, combine basil leaves, Parmesan cheese, garlic, and olive oil. Blend until smooth to make the pesto. Season with salt and pepper.
In a large bowl, toss the zucchini noodles with the pesto until well coated.
Add the cherry tomatoes and toasted pine nuts.
Serve immediately, garnished with fresh basil leaves.
