Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 2 cups fresh blueberries
  • 1/2 cup blueberry preserves
  • Fresh mint leaves for garnish (optional)

Preparation

  1. Preheat Oven: Preheat your oven to 325°F (163°C).
  2. Prepare Crust: In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then set aside to cool.
  3. Make Filling: In a large mixing bowl, beat the cream cheese until smooth. Add sugar and vanilla extract, continuing to beat until well combined. Add eggs one at a time, mixing well after each addition. Finally, fold in sour cream until the batter is smooth.
  4. Layer the Blueberries: Gently fold in half of the fresh blueberries into the cheesecake batter. Pour the batter onto the cooled crust. Sprinkle the remaining blueberries evenly over the top.
  5. Swirl with Blueberry Preserves: In a small saucepan, warm the blueberry preserves over low heat until it becomes a pourable consistency. Drizzle the preserves over the cheesecake batter and use a toothpick to create a marbled effect.
  6. Bake: Bake in the preheated oven for 50-60 minutes or until the center is set. The edges should be slightly golden.
  7. Cool and Chill: Allow the cheesecake to cool in the oven with the door ajar for about an hour. Refrigerate for at least 4 hours or overnight for best results.
