Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 1/2 tablespoons instant coffee granules
  • 1 tablespoon hot water
  • 8 ounces cream cheese, softened
  • 1 cup heavy cream
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Chocolate shavings for garnish (optional)

Preparation

  1. Prepare the Crust:
    • In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into a pie dish to form the crust. Chill in the refrigerator.
  2. Dissolve Coffee:
    • Dissolve instant coffee granules in hot water. Set aside to cool.
  3. Make the Filling:
    • In a large bowl, beat cream cheese until smooth. Add the coffee mixture and continue to beat until well combined.
  4. Whip the Cream:
    • In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  5. Combine Ingredients:
    • Gently fold the whipped cream into the coffee and cream cheese mixture until smooth.
  6. Fill the Crust:
    • Pour the filling into the chilled graham cracker crust, spreading it evenly.
  7. Chill:
    • Refrigerate the pie for at least 4 hours or overnight until set.
