Ingredients
- 1 and 3/4 cups all-purpose flour
- 1 and 1/2 teaspoons baking powder
- 1 and 1/2 teaspoons baking soda
- 3/4 cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1 teaspoon salt
- 2 large eggs, at room temperature
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- Chocolate ganache or frosting (optional)
Preparation
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Dry Ingredients: In a large bowl, sift together the flour, baking powder, baking soda, cocoa powder, sugar, and salt.
- Add Wet Ingredients: Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix on medium speed for 2 minutes.
- Boiling Water: Stir in the boiling water. The batter will be thin, but that’s okay.
- Pour into Pans: Divide the batter evenly between the prepared pans.
- Bake: Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Cooling: Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
- Optional Ganache or Frosting: Once the cakes are completely cooled, spread a layer of chocolate ganache or frosting between the two layers and on top if desired.
