Ingredients

For Lemon Herb Grilled Chicken:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • For Jasmine Tea Infused Rice:
    • 1 cup jasmine rice
    • 2 cups water
    • 1 jasmine tea bag
    • 1 tablespoon butter
    • Salt to taste
    For Garnish:
    • Fresh parsley, chopped
    • Lemon wedges

Preparation

1. Marinate the Chicken:

  • In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and pepper. Place the chicken breasts in the marinade, ensuring they are well-coated. Allow them to marinate for at least 15 minutes.

2. Grill the Chicken:

  • Preheat the grill to medium-high heat. Grill the marinated chicken breasts for about 6-8 minutes per side or until fully cooked and grill marks appear. Adjust cooking time based on thickness.

3. Prepare Jasmine Tea Infused Rice:

  • In a saucepan, bring 2 cups of water to a boil. Add the jasmine tea bag and let it steep for 5 minutes. Remove the tea bag and add jasmine rice, butter, and a pinch of salt. Bring it back to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes or until the rice is cooked.

4. Serve:

  • Plate the grilled chicken alongside a generous portion of jasmine tea-infused rice. Garnish with fresh chopped parsley and lemon wedges.
