Ingredients

For the Lemon Tea Bread:

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup plain yogurt
  • Zest of 2 lemons
  • 2 tablespoons fresh lemon juice

For the Lemon Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice
  • Lemon zest for garnish (optional)

Preparation

For the Lemon Tea Bread:

  1. Preheat the oven to 350°F (180°C). Grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the yogurt. Mix until just combined.
  6. Stir in the lemon zest and fresh lemon juice.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the tea bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

For the Lemon Glaze:

  1. In a small bowl, whisk together the powdered sugar and fresh lemon juice until smooth.
  2. Once the tea bread has cooled, drizzle the lemon glaze over the top.
  3. Garnish with lemon zest if desired.
