Ingredients
- 4 cups fresh or frozen peas
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1/4 cup fresh mint leaves, chopped
- Salt and pepper to taste
Preparation
- In a large pot, sauté the onion and garlic until softened.
- Add the peas and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 5 minutes.
- Remove from heat and stir in the chopped mint leaves.
- Using an immersion blender or regular blender, puree the soup until smooth.
- Season with salt and pepper to taste. Serve hot or chilled.
