    • 2 cups all-purpose flour
    • 1 cup granulated sugar
    • 2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 cup plain yogurt or sour cream
    • 1/2 cup unsalted butter, softened
    • 2 large eggs
    • 2 teaspoons vanilla extract
    • 1/4 cup strong brewed coffee, cooled
  • For the Streusel Topping:
    • 1/2 cup all-purpose flour
    • 1/2 cup brown sugar, packed
    • 1/4 cup unsalted butter, cold and cubed
    • 1 teaspoon ground cinnamon

Preparation

  • Instructions:Making the Streusel Topping:
    1. In a small bowl, combine the all-purpose flour, brown sugar, cold cubed butter, and ground cinnamon.
    2. Use a pastry cutter or your fingers to mix the ingredients until the mixture resembles coarse crumbs. Set aside.
    Making the Coffee Cake:
    1. Preheat the Oven:
      • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or a similar-sized baking dish.
    2. Combine Dry Ingredients:
      • In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
    3. Mix Wet Ingredients:
      • In a separate large mixing bowl, cream together the softened butter and eggs until light and fluffy. Add the plain yogurt (or sour cream), vanilla extract, and brewed coffee. Mix until well combined.
    4. Combine Wet and Dry Ingredients:
      • Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.
    5. Layer the Cake:
      • Pour half of the cake batter into the prepared pan. Spread it evenly.
    6. Add Streusel Topping:
      • Sprinkle half of the streusel topping over the cake batter.
    7. Repeat Layers:
      • Pour the remaining cake batter over the streusel layer, then top with the remaining streusel.
