Ingredients:

  • 1 lb (about 450g) carrots, peeled and chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 4 cups vegetable broth
  • 1 can (14 oz) coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Preparation

Steps:

  1. In a large pot, sauté onions and garlic until softened.
  2. Add chopped carrots, grated ginger, and ground turmeric. Stir well to coat.
  3. Pour in vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer until carrots are tender.
  4. Use an immersion blender to blend the soup until smooth.
  5. Stir in coconut milk and season with salt and pepper.
  6. Simmer for an additional 5-10 minutes to allow flavors to meld.
