Last week, with the help of my daughters, we planted our fall garden, filling the beds with garlic, onions, beets, Bok choy, and more. Now, it’s time to get creative in the kitchen with what we’ve planted!

Prepping the beds:

Prepping the Beds:
Before planting, we made sure the garden beds were ready to support the fall crops. First, we cleared out any leftover summer plants and loosened the soil with a garden fork to improve drainage and root penetration. We then added a rich layer of compost to replenish nutrients depleted over the growing season. For added benefits, we mixed in organic soil amendments, including bone meal and aged manure, to ensure our garlic, onions, and leafy greens would have the necessary nutrients to thrive.

What We Planted:
This fall, we chose vegetables that thrive in cooler temperatures. In one bed, we planted:

  • Elephant garlic and regular garlic for their robust flavor and ease of growth during fall and winter.
  • Yellow and white onions for their dual purpose—flavorful bulbs and edible flower tops.
  • Beets and Bok choy because they develop sweeter flavors when grown in cooler weather, making them perfect for fall harvesting.

In another bed, we planted carrots and radishes, quick-growing root crops that thrive in the crisp autumn air. Coming soon, we’ll also plant lettuce and spinach, cool-weather greens that will provide fresh salads well into the colder months.

Upcoming Plantings
With the weather cooling off, I’ll also be planting lettuce and spinach in the coming days. These leafy greens thrive in cooler temperatures, making them ideal for fall.

Extending the Growing Season with Fall Gardening:
Fall gardening offers a wonderful opportunity to extend your growing season, making the most of cooler weather to produce hearty vegetables. As the days get shorter and the temperatures drop, many crops thrive, developing richer flavors and a higher resistance to pests. With the right planning and preparation, you can enjoy a continuous supply of fresh produce well into the colder months. I’m particularly excited to see how our garlic, onions, and leafy greens fare, and I look forward to harvesting these crops and sharing their progress in the coming weeks.

Gardening in the fall offers more than just an extension of the growing season—it allows you to connect with nature as the seasons change, enjoy fresh produce, and embrace the unique flavors that cooler weather brings. With careful planning and a little effort, fall crops like garlic, onions, beets, and greens can flourish, providing fresh ingredients for months to come. As we watch our garden grow, I’m excited to share more recipes that highlight the incredible bounty of fall.
