Ingredients:
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 1 cup cherry tomatoes
- 1 cup mushrooms
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried Italian seasoning
- Salt and pepper to taste
Instructions:
- Preheat the grill to medium-high heat.
- In a large bowl, toss all the vegetables with olive oil, balsamic vinegar, Italian seasoning, salt, and pepper.
- Thread the vegetables onto skewers.
- Grill the skewers for 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
