Grilled Vegetable Skewers

Ingredients:

  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 cup cherry tomatoes
  • 1 cup mushrooms
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste

Instructions:

  • Preheat the grill to medium-high heat.
  • In a large bowl, toss all the vegetables with olive oil, balsamic vinegar, Italian seasoning, salt, and pepper.
  • Thread the vegetables onto skewers.
  • Grill the skewers for 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  • Serve warm as a side dish or main course.
