Grilled Chicken with Quinoa and Roasted Veggies

Ingredients
  

  • 4 oz grilled chicken breast
  • 1/2 cup cooked quinoa
  • 1 cup roasted broccoli and carrots
  • 1 tbsp olive oil
  • Lemon wedges for garnish

Instructions
 

  • Season chicken with herbs and grill until cooked through.
  • Cook quinoa according to package instructions.
  • Toss broccoli and carrots in olive oil, roast at 400°F (200°C) for 20 minutes.
  • Assemble the plate: half with veggies, a quarter with quinoa, and a quarter with chicken.
  • Squeeze lemon juice over the top for added flavor.
